so, my blog has been on hiatus, but I am hoping to catch up.
I’ll start off with these vanilla cupcakes topped with mixed berry buttercream for lovely Jenny’s birthday a few months back.
Busy with work and an internship at Bleeding Heart Bakery, I have been very behind in my updating, but I did have time to compete in this month’s Iron Cupcake Challenge: Berries, and voting is already up!
I made a Mixed Berry Pie-Cake filled with fresh blueberries, blackberries, strawberries, and raspberries and topped with a lemon nutmeg whipped creme.

This is a chocolate cupcake topped with peanut butter buttercream and crumbled reese’s cups that I made for Miss Lucy’s birthday.
It was such a hit that the birthday girl took the leftovers home with her.
So this month’s challenge for Iron Cupcake Earth was to make a Savory Cupcake.
Of course, I had to keep it southern and made the Ragin’ Cajun Cupcake!
(Cornbread batter mixed with sharp cheddar cheese and sautéed chorizo veggie sausage, onions, and bell peppers. Topped with a spread consisting of cream cheese, sharp cheddar, and New Orleans’ spices.)
The spread is so super yummy!

Neapolitian Cupcake.
Two of my favorite women mixed together…. Amy Sedaris’s vanilla cupcake meets Martha Stewart’s chocolate cupcake and topped with swiss strawberry meringue buttercream (made from a leftover jar of homemade strawberry jam that I made last summer).
This could be one of my favorite cupcakes yet, and I finally got the hang of buttercream!
Chocolate Sandwich Cookies.
They taste like giant oreos, but I think next time I want to make them into ice cream sandwiches. Also, it just made me crave whoopee pies, so I guess that is next on the baking agenda.
